Sounds like you've not bled it fully tbh. I've just had the engine out of my R50 Cooper and filled bled that yesterday - and they are not the easiest thing to get the air out of by any means. I had a right old game with it, thought it was all good and then the heater was not getting as hot as it should. After 50 miles it started getting hot, and the coolant level had dropped from MAX to MIN, so I guess it found its own way out. The S is really easy to bleed but the Cooper is a right pain.

I've just had this and it turned out to be the heater matrix which had blocked up.

It's nice and toasty now with a new matrix and I've also been able to bleed the system properly.

Sorry, I misread this. You changed stat and bled BECAUSE it's not getting warm - not that it's not getting warm after the change!

Take the battery box out and disconnect both pipes leading to and from the heater matrix - they are the ones at the back, joined physically by the bleed screw assembly. Shove a hosepipe in one and see if it floods out the other. If not then matrix is blocked. If it does flow well, I'd say you perhaps had an air block.
